This recipe provides enough dough to make 4 12 -inch diameter pizza crusts. Use it to do as many pizzas as you wish, then keep the rest of the dough in the refrigerator for 2 days at most or in the freezer for 3 months at most.

1. Mix 4 cups of flour, parmesan, yeast and salt in a large bowl. Add water and oil to it. Stir until the formation of a smooth paste. Knead the dough over a slightly children’s surface for 5 minutes or until the dough is homogeneous and elastic, gradually adding the rest of the flour.
2. Cut the dough into 4 pieces. (Each piece allows you to make a 12 -inch diameter pizza.) Spray each piece of cooking coating. To use the dough immediately, cover the number of pieces of desired dough of plastic film without tightening and let stand for 15 minutes.
3. Place each piece of dough remaining in a raimpling plastic freezing bag sprayed with cooking coating. Seal the bags, then keep them in the refrigerator for 2 days at most or in the freezer for 3 months at most.
